The plugin overrides the templates for invoice (invoice), cancellation (storno) and credit note (credit_note). All three behave the same. Other document types, such as the delivery note, are not changed.
When the regulation is active for the sales channel of the order:

The default text is "Gemäß §19 UStG wird keine Umsatzsteuer berechnet." in German and "No VAT charged according to §19 UStG (German small business regulation)." in English. You can change it in the snippet management, see Configuration.
The templates only check the plugin setting, not the tax status of the order. If a document is generated for an older order after activation, it also carries the notice and no tax columns. The plugin does not change documents that were already generated.
Whether the amounts in the document are shown without tax depends on the tax rates of the order items, not on the template. The template only hides tax columns and tax rows.
If a theme or another plugin has its own overrides for these document templates, the order of template inheritance decides which variant applies.
The plugin ships no email templates and changes none. Neither the notice text nor any tax hiding reaches the order confirmation, shipping confirmation or other emails automatically.
If the notice should appear in an email, add it yourself as fixed text in the respective email template in the admin. Invoices attached to emails as PDF contain the notice through the document template.
The plugin does not set the tax status (
taxStatus) of an order. A condition such asorder.taxStatus == 'tax-free'in an email template therefore does not become true through the plugin.
